About
Professional Summary
Dr. Adeshina Fadeyibi is an accomplished expert in Postharvest Technology and Food Engineering, with over a decade of combined industrial and academic experience. His work is dedicated to addressing global challenges in food preservation, focusing on reducing food loss and improving the quality and safety of perishable foods. His research integrates principles from food process engineering, and biophysics to develop sustainable, energy-efficient preservation systems tailored to tropical climates. A core area of his work involves the development of biodegradable nanocomposite films using starch-rich agricultural residues such as cassava, cocoyam, banana peels, and peanut shells. These films function as active and intelligent packaging materials, offering antimicrobial and moisture-resistant properties that extend the shelf life of important food products like beef, tomatoes, okra, onions, mushrooms, and garden eggs. His PhD research on cassava starch–zinc nanocomposites laid a strong foundation for innovative, eco-friendly food packaging strategies with direct relevance to global food security challenges.
Building on this foundation, Dr. Fadeyibi has expanded his work to include the application of non-ionizing radiation technologies, such as radiofrequency heating, ultrasound, magnetic field hydrocooling, and ultraviolet radiation, combined with cryo-osmotic dehydration and freezing methods. These integrated approaches are designed to enhance mass transfer, reduce microbial contamination, and preserve both the structural and nutritional integrity of perishable foods. He employs advanced computational tools, including finite element modelling and response surface methodology, to simulate and optimize thermal and mass transfer processes across experimental and pilot-scale systems. His additional work in thermal and rheological property evaluation, such as moisture sorption isotherms, puree flow behaviour, and heat transfer, contributes to the design of efficient food processing equipment and postharvest infrastructure.
Dr. Fadeyibi has authored numerous peer-reviewed journal articles, contributed to several Scopus-indexed book chapters, and led multiple research projects funded by TETFund. His future research focuses on the development of smart packaging systems embedded with biosensors and hybrid low-energy drying technologies, designed for use in low-resource, high-loss agricultural environments. These research directions align closely with his ongoing grant activities and postgraduate student supervision, reinforcing his long-term commitment to academic excellence, national development, and global food security.
